Amid steam engines and new technologies, we meet Zizinha, a guardian who keeps the production of rapadura alive in Nazarezinho, a town in Brazil’s semi-arid region. Milling is a poetic journey through the past and present of rapadura production, following for over a decade the operation of this important sugarcane mill in the backlands of Paraíba, which dates back to 1813.
